Easy Cabbage Slaw

This recipe has also been referred to as “crack” slaw. I would imagine it’s because it’s so good that it’s addicting. Food is for fuel, so I’m renaming it. I’ve also modified the recipe for my taste and propensity towards whole foods, budget and fresh ingredients. This is a really easy recipe and meal to have on hand when you don’t feel like cooking. Give it a try! Makes 4-5 servings.

1 lb organic grass-fed ground beef (you can also use ground turkey)

1/2 head sliced organic cabbage (you can also use one bag of coleslaw mix in place of cabbage and carrots)

1 small onion, diced

3 organic carrots, peeled and sliced

2 tbsp sesame or coconut oil, split

2 tbsp soy sauce or coconut aminos

1 tbsp minced garlic

1 tsp minced ginger

1 tbsp sriracha hot chili sauce

Brown ground beef in 1 tbsp oil on medium heat.  Drain and set aside.  In same pan, add remaining oil, onion, garlic and ginger.  Saute for about a minute until fragrant.  Add carrots and cabbage and stir together.  Add soy sauce and continue to stir until cabbage becomes soft (about 5 minutes).  Add ground beef and sriracha sauce. Stir continually for about 5 minutes.  Serve hot. One serving is two cups.
