Easy Breakfast Hash

Hash is a relatively easy, filling and healthy dish. The best part is it can also be made quickly and with ingredients you already have on hand!

Here’s what you’ll need:

3 tbsp olive oil

3 medium potatoes, diced

1 sweet potato, diced

1/2 onion, diced

1 tbsp minced garlic

4 precooked chicken sausages, diced

4 eggs

1/2 c shredded cheese

1/4 c green onions

For this recipe, I started with three tablespoons of olive oil heated in a large skillet. I then added half a Vidalia onion and one tablespoon of minced garlic (I love garlic).

Sautee onions and garlic until fragrant. Then add the potatoes. I used Yukon gold potatoes but skipped the sweet potatoes because my husband is not a fan.

Brown potatoes until slightly soft (about 20 minutes). Then add the sausage and continue to stir and brown until everything has a nice golden color. As the hash is continuing to brown, get your eggs ready.  I like mine over-easy so that the yoke is still runny.

Remove from skillet and plate, topping with a shredded cheese, green onions and one fried egg each. You can also add hot sauce or salsa to spice it up.
